I would have to say..
The original Dark Forces was a great experience for me.. I had always wanted to play a Star Wars FPS.. and the game was great.. had an engaging storyline and was not easy or too short.
It was the hay-day of Lucasarts entertainment for gaming and Dark Forces is probably (for the time period) the best release they have ever made.
I also want to put Doom on there.. I still remember playing the original Doom for the first time and being blown away by how real it was. I liked doom so much in fact that I continued to play it via phone line once Quake came out even tho it was online.
Quake 2 also for it's time was a great title.. and the online.. CTF.. rocket arena.. it was just so good and it had a huge playerbase.
From consol.. I have to give mention to Twisted Metal 1/2 and Metal Gear Solid (best storyline of any game series ever).

I would have to say..

Ah! Dark Forces! Now thats a game I havent played for a long, long time. It has some of the coolest weapons ever.
This is random, but that game was the first time I ever realised about cheats lol. Never played it without them though, I was way too much of a chicken.

Starcraft, Halo, Gears of War, Dawn of War, Company of Heroes all instantly come to mind for me. The first two mainly for story reasons, the latter for gameplay.
New PC coming Wednesday, so hopefully the latest PC games can at least match 360 games in terms of graphical quality.

Halo:
I've loved Halo ever since I first played it (It was actually the game that got me intrested in the gaming world.), the storyline is one of the best and it's gameplay that didn't involve Health Packs, also a great vareity of balanced weapons and exellent made maps for online and LAN.
The graphic engine for Halo: CE was great at that time period, although the graphics in Halo 2 had it's limits, I can't mock Bungie for that, since they had a really pressed time scheme, the campagin was a little disapointing aswell, but I'm really satisfied with the gameplay they came up with, especially for multiplayer.
Half Life:
(Many debates have been going on about if Halo or Half Life is better, though I say they are both great games in different ways.)
Although you didn't have any clue about the overall storyline in the game, it was this mysticism feel and all you had was these clues to give you a small hint of what had happend that I really enjoyed.
The gameplay wasn't as much varied and intense as in other First Person Shooters, but the combat gameplay gave a lot of feel to the game.
The Source engine gave alot of atmosvhere to the game aswell, what I really liked with it was that it focused more on details then the actual graphics.
Doom 3:
Doom 3 had a great enviroment, atmosvhere and story, atleast for that time. (Though the story willl always be great.)
What gave the game it's uniqe feel was that they barely used music, istead they relied on the enviroment to "make" the music by itself, and I tell you, it's one of the most scariest games I've ever played.
The Doom 3 engine was the best when it released, now it looks kinda old, but the game will still freak me out!
KOTOR:
The KOTOR series is best RPG I've experinced! You could choose to be good or evil and effect the storyline in your own way, KOTOR 2 stretched the boundaries out with that you can affect your party members aswell.
The overall story for KOTOR 1 was good, KOTOR 2 was good for a sequel, though I see it more like an expansion.
The graphic engine kinda lacked realism, but those holes are filled with a great gameplay!
Gears of War:
That game made me realize that Third Person Shooters could be great if properly made, the story was kinda uninspired if you ask me, (But still good though.) but the gameplay was kick-ass! With an intresting variety of weapons, and you often got yourself a laugh when your fellow squad mates where having conversations through the game.
The graphics fitted perfectly into the game, giving it a great feel and atmosvhere.
Total War:
I only started to pay attention to the series when Rome: Total War came out and I'm kinda sad that I didn't discover this great game serie earlier...
What I loved about it was that it wasn't just about the battles, but to managing and creating an empire in the Known World in military, economy, diplomacy and culture.
For a stratergy game the graphics are very detailed, you can zoom in on your units until you can see their faces. (Great job for Medival 2: Total War when they stretched the graphic's boundaries, making you able to see your troops with different armor, faices, ect.)
Company of Heroes:
Before Company of Heroes I had lost hope that RTS's would become as fun as the Total War series were, until a friend of mine showed Company of Heroes to me, it was love at first site.
I had always thought it was silly in RTS's (Medival/Aincent RTS's not included.) where your soldiers didn't take cover, just standing and shooting each other until the one with best weapon upgrade or armor upgrade won.
But Company of Heroes maded it in a totally different way, here your soldiers would take any cover that was able. they would lie down in the dirt in a hole or take cover in everything to buildings to destroyed veichles, this gave the game a great feel to it.
The gameplay was new to me, instead of gathering recources with gathering units, you took control of command points wich would automatically generate resources, and I loved it, it maded you able to focus on the battle a lot more then on having to worry about resource gathering.

It was beaten before release by TFC & Doom, and itīll be beaten again when Quake Wars is sold, then Fortress Forever is released as a free HL2 TC :D
